  • 2 tbsp Greek yogurt 

  • 1 medium egg 

  • 1 tbsp sugar-free maple syrup 

  • 1/2 tsp ground ginger 

  • Pinch of salt 

  • 4 Medjool dates (fresh) pitted

    Ingredients

  • 1/4 cup or 3 tbsp Harraway Rolled Oats 
  • 2 tbsp Greek yogurt 

  • 1 medium egg 

  • 1 tbsp sugar-free maple syrup 

  • 1/2 tsp ground ginger 

  • Pinch of salt 

  • 4 Medjool dates (fresh) pitted

Method

  1. Preheat the air fryer to 180°C.
  1. Stir all the ingredients together (except the dates), until thoroughly combined.

  1. Spray a ramekin (200 ml capacity). Pour in the batter.

  1. Place 2 dates into the centre and push down until submerged.

  1. Bake for 10-15 minutes until golden. It is cooked when a skewer comes out clean.

  1. To make the paste, combine two dates with two tablespoons of boiling water. Whisk together until smooth and add salt to taste. Add date paste onto the muffin before serving.
