    Ingredients

    Oat Crust

  • 1 cup Harraways Blackcurrant Spiced Apple Immunity Oats 
  • 2 Tbsp plus 2 tsp of extra light olive oil 

  • 1 tsp cinnamon 

  • 2 Tbsp Maple syrup or runny honey 

  • Cheesecake filling

  • 300g light cream cheese 
  • 1 Tbsp Maple syrup or runny honey 

  • 1 tsp vanilla 

  • 2 Tbsp lemon juice 

  • Topping

  • Sliced kiwifruit or berries

    Ingredients

    Oat Crust

  • 1 cup Harraways Blackcurrant Spiced Apple Immunity Oats 
  • 2 Tbsp plus 2 tsp of extra light olive oil 

  • 1 tsp cinnamon 

  • 2 Tbsp Maple syrup or runny honey 

  • Cheesecake filling

  • 300g light cream cheese 
  • 1 Tbsp Maple syrup or runny honey 

  • 1 tsp vanilla 

  • 2 Tbsp lemon juice 

  • Topping

  • Sliced kiwifruit or berries

Method

    Oat Crust

      1. Grease silicone cups or if using a large silicone cake/ pie dish (22cm) line with baking paper.
      1. Blend the oats, oil, cinnamon, and maple syrup/ honey until you get a crumbly sticky mixture.

      1. Spread the crust mixture into either the silicone cups or the large silicone cake/ pie dish. Press mixture down and flatten with a spoon.

        Cheesecake Filling

          1. In a bowl beat cream cheese, maple syrup/ honey, vanilla, and lemon juice until fluffy and well combined.
          1. Spread the filling on top and smooth out with a silicone spatula.

          1. Freeze for 2 hours for mini cheesecakes, or 4 hours for large cheesecake.

          1. Once out of the freezer, remove from pan/s and top with diced fresh fruit or berries to serve.
