- 1 cup Harraways Blackcurrant Spiced Apple Immunity OatsÂ

2 Tbsp plus 2 tsp of extra light olive oil

2 Tbsp Maple syrup or runny honey
- 300g light cream cheeseÂ

1 Tbsp Maple syrup or runny honey

1 tsp vanilla

2 Tbsp lemon juice

Method
Oat Crust
- Grease silicone cups or if using a large silicone cake/ pie dish (22cm) line with baking paper.

Blend the oats, oil, cinnamon, and maple syrup/ honey until you get a crumbly sticky mixture.

Spread the crust mixture into either the silicone cups or the large silicone cake/ pie dish. Press mixture down and flatten with a spoon.
Cheesecake Filling
- In a bowl beat cream cheese, maple syrup/ honey, vanilla, and lemon juice until fluffy and well combined.

Spread the filling on top and smooth out with a silicone spatula.

Freeze for 2 hours for mini cheesecakes, or 4 hours for large cheesecake.

Once out of the freezer, remove from pan/s and top with diced fresh fruit or berries to serve.
