Method
- Preheat oven to 200 C. Grease a ramekin dish.

Brown the butter over medium to low heat until a nutty flavour and colour forms, then set aside for 5 mins to cool.

Add sugars and vanilla essence to the butter mixture.

Add egg yolk and mix combine.

Add oats, all-purpose flour, and baking soda to the mixture and incorporate until just mixed through.

Spoon half the mixture into the ramekin and smooth over.

Add your chocolate and Biscoff to the layer before spooning the rest of the cookie dough mixture on top.

Create a sugar pat crust by sprinkling some oats and brown sugar on top, with a cut up square of chocolate and a sprinkle of sea salt.

Bake in the oven for 10 - 11 mins.

Scoop your favourite ice cream on top and enjoy (we used Lewis Road brown butter and caramel swirl, and it was amazing)
