Method

  1. Preheat the oven to 180ºC.

  1. Grease 23 x 33cm baking pan and set aside (or 20cm square).

  1. In a large bowl combine the oats, baking powder, cinnamon, nutmeg, salt and brown sugar and mix well until no lumps remain.

  1. In a medium bowl add the milk, eggs, vanilla essence, golden syrup and melted butter and whisk well.

  1. Pour the wet ingredients into the dry and combine well and set aside.

  1. Peel and core your apples and dice into small pieces, add to a bowl.

  1. Combine the second measure of brown sugar and cinnamon in a little bowl, add half of this to the diced apples and mix to coat, reserve the other half for the topping.

  1. Pour half of the oat batter into the greased baking pan and spread evenly.

  1. Spoon the coated apples over this in an even layer.

  1. Pour over the remaining oat batter and spread until even.

  1. Sprinkle over the second half of the brown sugar cinnamon mixture as a topping.

  1. Bake in the preheated oven for 30-35 minutes or until golden and a knife comes out clean.

  1. Allow the baked oats to set for 20 minutes and serve warm for dessert.

  1. Topping ideas are whipped cream, custard, ice cream and a lovely drizzle of caramel sauce or honey.
