2 cups Harraways Rolled Oats
- 2 tsp ground cinnamon
- 1 tsp salt
- 3 cups coconut milk
- 1/2 cup maple syrup, plus extra to garnish
- Juice and zest of 1 orange
- 1 large carrot, grated
- 1/4 cup walnut halves, toasted and lightly crushed, plus extra to garnish
- 1/4 cup sultanas
- 1 cup Greek yoghurt

Method
- Preheat oven to 160°C fan bake/180°C standard. Lightly grease a baking dish.
- In a large bowl, mix together the Harraway’s Rolled Oats, cinnamon and salt to combine.
- In a separate bowl, whisk together the coconut milk, maple juice and orange zest and juice to combine. Pour into the oat mixture and stir until the oats are fully coated.
- Add the grated carrot, walnuts and sultanas, and stir until everything is well mixed.
- Pour into your prepared baking dish, smooth the top and bake for 50 minutes, or until lightly browned on top and cooked to your liking.
- Serve warm, topped with the Greek yoghurt, extra toasted walnuts and a drizzle of maple syrup.
