    Ingredients

  • 2 cups Harraways Rolled Oats 

  • 2 tsp ground cinnamon 
  • 1 tsp salt 
  • 3 cups coconut milk 
  • 1/2 cup maple syrup, plus extra to garnish 
  • Juice and zest of 1 orange 
  • 1 large carrot, grated 
  • 1/4 cup walnut halves, toasted and lightly crushed, plus extra to garnish 
  • 1/4 cup sultanas 
  • 1 cup Greek yoghurt

    Ingredients

  • 2 cups Harraways Rolled Oats 

  • 2 tsp ground cinnamon 
  • 1 tsp salt 
  • 3 cups coconut milk 
  • 1/2 cup maple syrup, plus extra to garnish 
  • Juice and zest of 1 orange 
  • 1 large carrot, grated 
  • 1/4 cup walnut halves, toasted and lightly crushed, plus extra to garnish 
  • 1/4 cup sultanas 
  • 1 cup Greek yoghurt 

Method

  1. Preheat oven to 160°C fan bake/180°C standard. Lightly grease a baking dish.
  1. In a large bowl, mix together the Harraway’s Rolled Oats, cinnamon and salt to combine.
  1. In a separate bowl, whisk together the coconut milk, maple juice and orange zest and juice to combine. Pour into the oat mixture and stir until the oats are fully coated.
  1. Add the grated carrot, walnuts and sultanas, and stir until everything is well mixed.
  1. Pour into your prepared baking dish, smooth the top and bake for 50 minutes, or until lightly browned on top and cooked to your liking.
  1. Serve warm, topped with the Greek yoghurt, extra toasted walnuts and a drizzle of maple syrup.
