    Ingredients

    Night Before

  • 1 cup Harraways Steel Cut Oats

  • 2 cups water

  • Next Morning

  • 4 bacon strips (130g)

  • 1 sprig of spring onion, sliced thin

  • Pinch of salt and pepper

  • 1/2 cup cheddar cheese, grated

  • 4 eggs

Method

    Night before

      1. Add oats into a saucepan with a lid, and cover oats with water. Put the lid on top and leave to soak for 6 hours or overnight.

        Next morning

          1. Drain-soaked oats and set to the side.

          1. Cut bacon into small pieces.

          1. Heat a deep pan on low to medium heat. Cook bacon until browning, add cooking oil if needed.

          1. Remove bacon and set to the side. Add in sliced spring onion and extra oil if needed, sauté until fragrant and soft. Add in strained oats, 2 cups of water, salt and pepper to taste.

          1. Cook until most of the water as absorbed and porridge is thick. Turn off the heat and stir through bacon and cheese.

            Serve immediately and top with extra cheese and spring onion. Optional: add a poached or sunny side up egg to the top.
