  • ¾ cup desiccated coconut

  • 2 tablespoons cocoa powder

  • 75 grams of butter

  • 2 tbsp golden syrup

  • 1 1/2 tsp of baking soda

  • 3 tbsp boiling water

    Ingredients

  • 120g Harraways Rolled Oats

  • 1 cup standard flour

  • 1 cup sugar

  • ¾ cup desiccated coconut

  • 2 tablespoons cocoa powder

  • 75 grams of butter

  • 2 tbsp golden syrup

  • 1 1/2 tsp of baking soda

  • 3 tbsp boiling water

  • Hidden

Method

  1. Preheat the oven to 160ºC. Grease and line 2 baking trays.

  1. Mix first 5 ingredients in bowl (oats, sugar, flour, coconut, cocoa powder) 

  1. Melt butter and golden syrup in microwave or small pot. Add the boiling water, then stir in the baking soda. The wet mixture will start to foam. Fold this into the dry ingredients and stir until mixed through.

  1. Roll spoonful of mixture into balls and place them on the baking tray lined with baking paper. Make sure there is room for the balls of biscuit to spread as they cook.

  1. Roll heaped teaspoonfuls of the mixture into balls, placing on the prepared trays as you go. Flatten with a fork dipped in cold water. 

  1. Bake for 15-20 minutes or/until the biscuits darken slightly.

  1. Cool on a cooling rack. Then store in airtight container.
