  • 120g Harraways High Protein Vanilla Oats

  • 50g peanut or almond butter

  • ¼ cup maple syrup

  • 3 tbsp cocoa powder

  • 2 tbsp milk of choice

  • 6 dried apricots, chopped

  • 2 tbsp raisins

  • ¼ cup chopped nuts (a mixture of almonds and peanuts is good)

  • Pinch of salt

  • 75 g dark chocolate

  • 1 tsp coconut oil

  • 120g Harraways High Protein Vanilla Oats

  • 50g peanut or almond butter

  • ¼ cup maple syrup

Method

  1. Mix the oats, cocoa, dried apricots, raisins, nuts and salt in a bowl.

  1. Add the nut butter and maple syrup to a small saucepan. Heat over low heat, stirring, until smooth.

  1. Pour into the dry ingredients and mix well. Add the milk and mix until the mixture comes together and holds when pressed.

  1. Press firmly into a lined 20cmx10cm loaf tin.

  1. Melt the chocolate and coconut oil together in the microwave or bain-marie until smooth. Drizzle over the oat mixture and sprinkle with the chopped nuts and cacao nibs.

  1. Refrigerate for 1-2 hours, or until firm. Slice into 6 bars.
